Barbacoa is prepared in different ways in Mexico, with this recipe being inspired by the spicy flavours from the state of Chiapas. Traditionally, the meat for this dish is stewed in an underground ‘oven’. After the meat has been slowly cooked, it falls apart into tender pieces. With this seasoning paste you can easily make this stew in your own kitchen, without having to dig a hole in the garden. Do you prefer a vegetarian version? Then try a jackfruit barbacoa.
800 grams stewing beef
350 grams of rice
600 grams green beans
1 red onion
15 grams fresh coriander
25 grams unsalted butter
And from Fairtade Original:
1 Fairtrade Original spice paste for Mexican barbacoa
Bring the meat to room temperature. Cut it into chunks.
Fry the meat in butter in a frying pan until brown.
Stir in the spice paste. Add 500 ml of boiling water. Put the lid on the pan and let it simmer for at least 2 hours on low heat.
In the meantime, cook the green beans and rice. Serve with thinly chopped red onion and finely chopped coriander.
Also nice with tortillas instead of rice.
